How is crema formed?

Crema is the delicious foam that forms on the surface of an espresso. It represents about 10% of the volume of the espresso. It is created only from coffee, no milk added! Crema is the diffusion of a gaseous phase (Carbon dioxide (CO2)) into a liquid phase (water/oil emulsion of the coffee). The gaseous phase is comprised of CO2 that forms in the coffee grains during roasting. It is an essential element of the formation of crema.
